From CIEC Promoting Science, this booklet is the forerunner of its Understanding Food Additives web site. The booklet contains information on a range of food additives and extensive suggestions for practical activities to investigate food and food additives.
Food additives described in the booklet include:

• Anti-caking agents

• Emulsifiers
• Flavourings
• Gelling agents, thickeners and stabilisers
• Preservatives
• Sweeteners.
There are also sections on safety and regulation of food additives, food allergy and intolerance and a glossary of E-numbers.

Please note that collections may contain ARCHIVE resources, which were developed at a much earlier date.
Since that time there have been significant changes in the rules and guidance affecting laboratory practical work.
