Through the Cooking Glass: The Wonder of Aroma and Flavour
England (Yorkshire & the Humber)
04.05.2011
7.30pm - 9.00pm
This latest Café Scientifique event being organised by Science City York will explore the overlap between chefs and scientists, answering questions such as:
- Why do certain tastes trigger memories?
- How does aroma modify flavour sensations?
- How does molecular symmetry affect flavour?
Speaking during the evening will be:
John Bradley, Emeritus Professor of Chemistry at the University of Hull who, as well as a career in organic chemistry, is a one-time chef and keen restaurant-goer with a particular interest in molecular gastronomy.
Café Scientifique is an informal evening of lively discussion revolving around contemporary scientific issues of the day.
Each meeting begins with a short talk from an invited science-related speaker, followed by up to an hour of open discussion including a Q & A session. Everyone is welcome to attend and express their views, or to just enjoy a drink and listen. No scientific knowledge is assumed and everyone can participate.
Admission is free but by ticket only.
Venue: The Basement, City Screen Picturehouse, York
